Lager beer was 1st developed by brewers in Germany who discovered that aging beer in natural caves immediately after fermentation designed a clean beer that is much less susceptible to contamination from bacteria and wild yeast. This process, named lagering, actually led to isolation of yeasts that carry out greatest at low temperatures, whereas ale yeasts demand larger temperatures to thrive.
